A Stunning Tasting Menu

The tasting menu at Stubborn Seed goes beyond traditional dining to offer guests a luxurious experience, enhanced by the restaurant’s ambiance, which features industrial chic décor and a glass-fronted display kitchen. The menu remains similar year-round but is subject to change based on seasonal availability.

The First Half of the Eight-Course Menu

The first course begins with Nagasaki Prefecture Ishidai, served with yuzu and elderflower-compressed starfruit, green tomato nuoc cham, and marigold and starfruit granita.

The second course is a sungold tomato pâte de fruit, with Florida orange and herb powder.

The third course features wagyu beef tartare with milk bread, kumquat gel, radish and kohlrabi kimchi, and crispy leek.

The fourth course is a Hudson Valley foie gras torchon with strawberry fresno jam, pistachio-sunflower crumbs, and Sullivan Street Bakery sesame sourdough.

The fifth course contains housemade ricotta gnudi with buttery greens, hazelnut “everything” crumble, Aleppo confit squash, caramelized onions, and manchego umami foam.

An Intermission

The intermission at this point contains an indigo cherry tomato sorbet, which is paired with fennel granita and rosemary gel.

The Second Half of the Eight-Course Menu

Following the intermission, the sixth course features striped sea bass accompanied by pak choi, Swiss chard chimichurri, fennel root purée, confit fennel, tomatillo emulsion, and dill fennel oil.

The seventh course is a broccoli and cheddar doughnut with charred rapini relish and winter truffle.

Last but not least, the eighth course presents a 7-day dry-aged duck breast, served with roasted fioretto, blue oyster mushrooms, Marcona almonds, dragon tongue beans, crispy miso cabbage, and allspice jus.

Topping it all off is a mille-feuille dessert with black sapote crémeux, espresso hazelnut crumble, ginger diplomat, Florida kumquat marmalade, and allspice ice cream.

Stubborn Seed cannot accommodate tasting menus for guests with a vegetarian or vegan diet, nor for those who must avoid dairy entirely.

Cancellation fees of $50 per person will be charged if canceled within 24 hours of the reservation, with a cancellation fee of $100 applied around holidays and special occasions.
